Chicken and Quinoa Kale Salad

5 cp raw Kale, chopped
8 oz Chicken, sliced
3/4 cup Quinoa, cooked 
1/4 cp Onion, thinly sliced
2 TBS Coconut Oil

For Dressing: 
1//4 cup Balsamic Vinegar
1 whole Lemon, juiced 
4 TBS Olive Oil

Whisk together all ingredients for dressing, set aside
1) Cook quinoa according to package and put coconut oil in sauté pan and heat. 
2) Put sliced chicken in coconut oil and season with any Mrs Dash flavor. 
3) After chicken and quinoa are cooked put into the bowl with the kale. Put onions into he same sauté pan you cooked the chicken in and cook until soft. Mix into chicken/kale/quinoa mixture. 
4) Top with dressing. 

This meal refrigerates amazingly. It tastes even better the second day. If you don't like the taste of raw kale put it in the sauté pan with a little coconut oil and wilt it. It will make it sweeter but if you leave it in to long it will start to get a little bitter.
