Strawberry Fruit Leathers

All kids love anything gummy. Let's be honest here, all people love anything gummy. Instead of reaching for the box of fruit roll ups why not try making your own at home? Extremely easy and even more tasty than those long "fruit" rolls. With only 4 ingredients (and one being water) you can give these to your kids when they are craving something sweet and feel good that they are getting a healthy alternative to that processed junk.

Ingredients: 

2 lbs Strawberries ( 32 oz or a little over two pints)
1/2 Lemon
1/4 cp Sugar or less
1 cp Water

Recipe: 
1) Preheat oven to 170 degrees then prop oven door open (I put a metal ladle in the door)
2) Cut Strawberries into very small pieces and place into pot with the water and squeezed lemon. Cook on medium for 15 minutes or until strawberries are extremely mushy.
3) Place strawberry/water mixture into a blender with sugar and blend until there are no chunks and it is a medium/runny liquid.
3) Cover a baking sheet with plastic, parchment paper, or a silicone baking pad. The temperature is low enough that it will not melt the plastic. (Wax paper will not work for this recipe the leathers will stick) and grease the plastic with olive oil or cooking spray.
4) Pour mixture on top of the tray and spread around evenly with a butter knife and place into the oven for 7-9 hours. Mine came out perfect at nine hours but be sure to check on it just to be sure it's not getting to hard or cracking. If at any time it seems to be cracking brush some water on top. 

That's it! It is time consuming in the sense of how long it is in the oven but the process of getting it there doesn't take long at all. L absolutely loves these and I do too!
