Fall is here! Ok, not really. But I "can't" wear white pants anymore so for me it's time to decorate for fall! My very favorite thing about fall is all the food of course! Since we are trying to eat healthier I am trying to make traditional recipes that we all love into better alternatives. Here's the first one that Logan and I made last night and there will be a whole lot more to come!

Calories: 88
Total Fat: 4.4 g
Saturated: 3.8 g
Cholesterol: 35.2 mg
Sodium: 117.5 mg
Potassium: 100.9 mg
Total Carbs: 10.3 g
Fiber: 1.2 g
Sugars: 5.4 g
Protein: 2.2 g

M3, (M1 + M2 in moderation) 


2 overly ripe Bananas
2 whole Eggs
2 tbs Coconut Oil, melted
1 tps Vanilla Extract
2 tbs pure Maple Syrup
1/2 cp Coconut Flour
2 tbs Ground Flaxseed
1 tbs Cinnamon
1 tps Baking Soda


  Preheat oven to 350
1) Mash banana in medium bowl with eggs and coconut oil until there are no big clumps of banana.
2) Pour in vanilla extract and maple syrup and mix thoroughly 
3) Add dry ingredients to wet ingredients 
4) Mix and pour into a greased loaf pan. Mixture will barely rise.
5) Bake for 35-45 minutes or until toothpick comes out clean. 

You can keep on the countertop for up to one week or you can freeze it :)
