11 month PP Update

Tuesday, July 22, 2014

Well, I wasn't wanting to do this until I was happy with how I look but this is me! I told myself I'd be looking fan-freaking-tastic by the time foster was one and at 6 months I was telling myself I had time but now, with only a couple of weeks left, I'm realizing that I obviously wasn't focusing on how I looked enough to  reach my "goal" and I'm totally ok with that. I have been roasting s'mores over the campfire and making pancakes in the morning when Lo asks. We are totally just loving summer.

Whenever we can we have been going to beer yoga which is a total blast but we have been so busy that we've barely made it.

We went to my uncles wedding where, according to my papa, anytime is margarita time.

We made a 13 hour drive to my nephews first birthday. Staying healthy on the road wasn't always easy with Chic fil a calling my name.

I, Austin, still love my pomegranate mojito tea lemonade...could they think of a longer name?

When I got to the gym, I take selfies...there is one picture.

We got a Buffalo Wild Wings in our town and I had half of a spinach and artichoke chicken flatbread that was super good.

One of my favorite quick meals when Bryson is at work is greek sweet potato fries.

cut up 1 sweet potato, toss in EVOO and bake at 450 for appx 15-25 minutes. Squeeze half of a lemon all over the fries and then top with salt, pepper and feta cheese.

In my hubby's home town we went mini golfing *please note that high heeled boots do not work for mini golf*

We have spent a couple of kellys (Bryson's days off) up at the lake. We have fallen in love with SU...well I have anyways.

I normally with have 1-2 smoothies a day, this banana date smoothie is one of my go-tos.

Another one is my watermelon/banana smoothie <3

One meal prep meal I normally make for myself is whatever veggies are in the fridge mixed with Near East Quinoa Brown Rice Blend.

In this there are 1 cup asparagus, 2 squash, 2 zucchini, 1 1/2 orange bell pepper, 1 red bell pepper and 1 onion all sautéed in 1 tbs EVOO until soft. I put in some cumin, chili powder, garlic powder and s&p. When the roasted red pepper quinoa was done I mixed it all together.

yield four servings.
