Every grocery shopping trip somehow bananas end up in our cart. Don't get me wrong, I love bananas in my shakes and pancakes, Lo loves to snack on them, Foster loves them in his snack net but no matter the good intentions to eat them all they always seem to be black before we can eat them. Lo will not under any circumstances eat bananas that have marks on them. With it being so chilly out now it's the perfect time of the year to make banana bread! Warm, moist, chocolatey, banana bread.
Bryson took one bite of the first slice and said, "Do we have enough bananas to make another one?"
You can tell how creamy this bread will be as you're stirring the mixture. It's very thick and delicious looking before it's even baked, which is probably why I kept opening the oven door to take a peek on it ;) (which is also why the top caved in - oh well, what can you do....maybe not peek in on it ;) )
I typically add walnuts to my banana bread but Lo is not to big on nuts but loves banana bread so I omitted them this time. I do wish I had sprinkled some on the top for some crunch and she could have easily picked them off. If you're wanting your banana bread to look fancy save part of the banana and cut it into slices to lay on the top. I ended up letting Foster eat the ones I was planning on using :)
Now our house smells of delicious banana bread and a yummy turkey chili in the crock pot that I cannot wait to eat with cornbread tonight!
Ingredients:
3 Bananas, overly ripe
1 3/4 cp of Flour
2/3 cp Sugar
2 Eggs
1/3 cp Butter
1/2 tsp Vanilla Extract
1/2 tsp Baking Soda
2 tsp Baking Powder
1/2 - 1 cp Chocolate Chips or Walnuts (or a mixture of both)*
*You can add any filler you like or none at all. Blueberries, cranberries, coconut - anything can be added
Directions:
Preheat oven to 275 degrees
1) Mash bananas with a fork until no chunks remain
2) Combine the rest of the ingredients (except filler ingredient/s of your choice) until smooth.
3) Fold in filler ingredient/s
4) Bake for 60 minutes and allow to cool for 10-15 minutes in pan.
yields one loaf

It's my favorite time of year! Halloween through Christmas then I am pretty much over the cold haha but I love all the family time and baking!

You should definitely give this one a shot I make it all the time as well and always like it but this one is definitely the best I have come up with so far :)
