We did it! We are through with animal products and bi-products and living a healthier and environmentally friendly lifestyle. There has been some definite hit and misses in the food department but I am proud to say there have definitely been more hits and have found some recipes that are WAY better than anything I had been cooking.
I wanted to share some of the recipes I followed that I absolutely loved and made the transition for my hubs and daughter so much easier than if I was to just wing it

On one of my favorites that we tried was the Thai Basil Eggplant. We tried it with the tofu and decided to omit it for the next time but everything else was perfect
Next we had zucchini burgers! Again, totally delicious. We grilled it rather than pan frying it.
Next we had Lentil Shepherds Pie but I added green beans and added some garlic salt. We also used this cauliflower mash instead of the mashed potatoes
Another delish recipe was the Tomato Basil Roasted Panini we did everything exactly how it said
These a just a couple delicious recipes that I have found and will share as I find more!
For breaky I normally do Daves Killer Bread with Earth Balance and cinnamon and for lunch I meal prep.
Lunch Meal Prep {8 days or 8 servings}
1 large onion
3 zucchini
3 squash
1 red pepper
1 yellow pepper
1 red pepper
2 cups brown rice
Saute veggies in a little olive oil and earth balance butter unit soft.
Cook rice according to directions
Mix and separate into containers for easy grab and go.

Thank you so much Brooke! I love your blog :) I think if you do a slow transition it's not near as bad as just going cold turkey, (or cold tofu ;) ) Cut out milk and all dairy first and when you don't think about it anymore then cut out the meat :) Honestly it's not the meat that trips me up, it's the dairy and random things
